May Day Cooking

May day is celebrated in India on the 1st of the month May. But since I'm working for a UK biggie, I'm forced to follow UK holidays. UK holidays are so very few when compared to Indian holidays and I'm feeling bad about missing out on most of the Indian festivities as I'm at work those days.

So as per UK calendar, May Day is celebrated on May 4th this year. Its usually celebrated on the first Monday of May. It was a rather relaxing day as I had no work to catch up and was all alone at home. So I thought I might as well spend sometime on the internet and share a few things that I did today. I even cooked something funny just for myself.

Here is what I cooked. I don't know what to name it. But I'll call it "May Day Special!"

It sure looks colorful and it turned out very yummy too. I just sauteed onions, green chillies, potatoes and carrots in oil. Seasoned it with salt and chilly flakes coz I love hot spicy food. Added a beaten egg at the end and garnished it with some Kasuri Methi and Curry leaves and wallahhhh...there's the dish ready to eat in just 20 mins. I relished all of it all by myself and just sat back and watched a lot of tv.
